I'd seriously look at Xubuntu for that box - lightweight window manager and some pretty nice functionality. Being Debian-based you still get all the usual familiar Linux functionality and access to the Debian repositories.
Install Jamie Cameron's WEBMIN on it, ensure you can boot it headless (i.e. no screen) and kbd/mouse-less if possible and shove it away in a corner with a LAN connection.
